Fresh kale can be good. Here, it's combined with quesadillas, hard boiled eggs, roasted mushrooms, and home made lemonade for a low cost, healthy lunch or casual dinner.

Candied Yams

Did you know yams and sweet potatoes are both actually sweet potatoes? Yams have very little Vitamin A, while sweet potatoes have tons. Here is a very easy, very typical, Thanksgiving dish.

3 lbs. yams (about six large potatoes)
1/2 cup butter (1 stick)
1 cup brown sugar
1 teaspoon salt
juice of one lemon
12 marshmallows, cut into pieces

Boil a large pot of salted water and cook yams until almost tender. Preheat oven to 375. Pare and cut yams into large wedges and lay on baking sheet. Dot with butter then sprinkle sugar, lemon, and salt on top. Bake in oven for 20 minutes, adding the marshmallows on top halfway through. Use the broiler to brown marshmallows if desired (be careful not to burn them with this method).
