Be sure to pronounce this in that snooty foodie way – “bru-CHET-ta”. It will really impress your asshole friends.
3 small sweet tomatoes, coarsely chopped
2 tablespoons olive oil
1 tablespoon chopped fresh oregano
1 tablespoon minced sweet onion
2 cloves garlic, minced
1 teaspoon chopped fresh basil
1/2 loaf peasant bread, cut diagonally into 1 inch slices
1/4 cup freshly grated parmesan cheese
Preheat oven to 400. In a medium bowl, combine tomatoes, olive oil, oregano, onion, garlic, and basil. Place bread on a baking sheet and top with parmesan, then tomato mixture. Bake in preheated oven for 8 to 10 minutes, or until bottom of bread is browned. Allow to cool 5 minutes before serving.
